Ingredients:
• 600 g dark chocolate, broken into squares
• 125 g butter
• 100 g Brazil, pecan, macadamia or cashew nuts
• 100 g pumpkin seeds
• 100 g sponge fingers, broken into pieces
• 175 g ginger preserve, cut into small pieces
• Berries for serving (optional)
Method:
- Grease a 23 x 10 cm silicone loaf tin.
- Melt the chocolate and butter in a glass bowl in the microwave oven until smooth. Stir frequently.
- Add the nuts, seeds, sponge fingers and ginger preserve with syrup. Mix rapidly as the mixture sets quickly.
- Turn the mixture into the loaf tin and chill until firm.
- Unmould and slice. Serve with berries (if using).
Tip: Try adding pistachios and cranberries; or pecan nuts with dates or figs.
